Country Salad and Homemade Bread Braid

Using an upside down roaster lid, this is the prettiest country salad, doncha think??  I love using whatever is available at hand to serve and make it lovely in a very simple way.



And......the homemade bread braid, using the BreadBecker recipe and hand braided.  It was delicious!

One of the few items I would not want to live without in my kitchen is this baby!
The list I have used it for:

chopping / slicing veggies and fruits-including potatoes for round fries:)  and apples for pies and.....
smoothies
whipping cream
chopping up cooked ground meat
making bread dough
julienne just about anyting

Secret Ingredient



I am pretty sure that not many people I know would guess what this is.  Probably only a handful -and they would be within my own family ;)  These bottles are one of the best gifts around, in my book.  It threw me for a loop recently, too.

I was making bread for my family, which I don't always do, but this day I wanted the smell of "home" ....er, OK,  I did not want to have to drive to town to buy another loaf.  SO I went to getting my bread machine ready and found that I had run out of  agave nectar....and honey.  The next thing that caught my eye was this.  I knew it was sweet.  And this bottle was a pretty light variety.  So, in it went.   And  can I just tell you that this bread was Divine!  Just as good as any other loaf.  It smelled terrific and tasted the same.  It worked great for sandwiches and no one knew the difference. And I am delighted that I have plenty of it on hand, since the price of honey and agave is not at its best right now.

I bet you still don't know what it is, do you?

It's old fashioned cane syrup.  Not to be confused with modern day "syrup."  I was raised on this stuff, y'all.  It can't be beat.  I had never tasted "pancake syrup" until I went north on my own.  Honestly.  And this stuff....it just says 'down home' to me! -and it makes great bread, too.

My Special Needs Friend: My Crockpot

I have an older version of this crock.  It's the Smartpot but my timer thingee doesn't work anymore.  My lid gave up a long time ago and I ordered a new one.  That one gave up, too.  Now, they don't make the lids anymore and I refuse to buy the same style crockpots in the store that I know that they are not gonna have replacement lids for!!!  So, until I find a big crockpot with a glass lid, I am not buying a new one.   Period.  So, I improvise.  Been doing it this way for a while.....like more than a year.
I love my crock pot.  I really, really love it.  It is faithful.  It no longer has a lid but it never stops cooking.  I even used it to make homemade yogurt in  yesterday...but I will write up a separate post for that, as it wasn't the way crockpot365's blog says to use it.  I sorta did my own thing.

Yes, I said that it doesn't have a lid and I use it almost daily for a variety of things.  I use it for anything I would use an oven for.  Anything....well almost.  I don't bake bread in it, although I know some do.  But I have made desserts, baked potatoes, breakfasts...really almost everything. 

Here's how I used it for my meatballs this past week:
First I made up my meat mixture, with seasonings and whatever you add-I added onions, green peppers, eggs to hold it together, a few bread crumbs and some seasonings.  After I used my mixer to mix it all up, I scooped out meat with my ice cream scoop to form balls and placed them into the bottom of the pot. 

 Then, as you can see below, I layered with aluminum foil and repeated the same thing.

I wrote up one of my meatball recipes here.  But on this day, I was making meatballs in sauce for meatball subs.


A word of warning (or a tip, whichever way you see it)  :  if you cook with foil instead of a lid, it cooks much, much faster than with the lid.  Don't say I didn't warn you.  I only cooked these meatballs 2 hrs and waited to warm them until 2 hrs before I was going to serve them and they were steaming hot when we ate!

Organization: My Monthly Menu


A few days before I read Erica's post at Confessions of a Homeschooler, I had the same thought! With school starting and so many other things to keep organized, I could not possibly think of adding another paperwork item to my list of to-do's. So, I decided to make a monthly menu and just repeat it. It already allows a few "new recipe" slots in there for variety. So, I hope it won't feel like we are having many repeats in a month. I try to make healthy , homemade meals. I also try to accommodate what my family likes and will eat. Some are healthier than others, I do concede. I am planning to create 4 shopping lists, one for each week of the month, and that way my master shopping list is done for me each week. That would feel great, no??
A few really quick notes: my husband works Tues-Sat so, our weekend is Sun/Mon. He loves to grill out on those days and he loves a burger! J Also, veggies vary, depending on season/availability but are served at nearly every meal. Breakfast and lunch are planned so that my children can either prepare themselves or with little supervision. Breakfasts don't really need a plan… and lunch sometimes revolves around leftovers, soup/sandwiches or other fairly light fare. Snacks are at around 3:30 and are something like cheese sticks, yogurt or peanut butter crackers. And I do very little on Sundays . SO, this is just my dinner menu.
